Falafel

So Good For You! Home-made with Chickpeas and spices, and a tahini sauce. 

Tempeh Patties

Tempeh, potatoes and  spices with a peanut sauce. 

Stuffed Winter Squash

Winter squash stuffed with grains (bulghur, couscous, quinoa, or rice), and soy sausage. Can be eaten as a side dish or main course 

Vegetarian Lasagna

This dish can use almost any combination of veggies. You won’t notice the difference between the classic and vegetarian. 

Country Vegetable Pot-Pie

Mixed fresh vegetables and herbs, in a vegetable-based broth. 

Moussaka

A layering of eggplant, mushrooms, and a bechamel sauce. 

Chickpea Vindaloo

One of my favorite entrees, A fiery dish of protein and spices, delicious over brown rice and with a loaf of french bread or naan. 

Vegetarian Chili

A warming dish, or should I say “electrifying,” with chipotles, and variety of spices.

Heat can be diminished by the use of green bell peppers, if you prefer.  
 

Fish

Blackened Salmon on Caesar Salad

Sautéed salmon with thyme and cayenne pepper on a Caesar salad.

Made without eggs. 

Trout Almondine

Sautéed trout with toasted almonds and herbs. 

Mediterranean-Style Halibut

Fish baked with slices of zucchini, tomatoes and olives - a flavorful combination! 

Roasted Salmon with Lime Salsa

An energizing dish – Roasted salmon with cilantro, red onion, lime and a touch of cayenne pepper. 

Five Spice Salmon with Savoy cabbage

Made with fragrant spices and a touch of heat, the cabbage completes this tasty meal

Along with sweet potatoes and apple slices. Delicious! 

Seared Tuna Steaks with Fennel and Mesclun Salad

Thick Tuna steaks marinated with fennel, red onion, and orange slices finished with mesclun salad, a light tasty meal. 
 

Poultry

Couscous with curried chicken and chickpeas

Healthy blend of grains and protein with spicy curried sauce. 

Chicken pot pie

A comfort classic: chunks of chicken and fresh vegetables encased in a flaky crust. 

Hunters Chicken

A delicious blend of herbs and spices with wine and mushrooms. 

Roasted Chicken

Tender roasted chicken rubbed with spices and sea salt and roasted red potatoes. 

Chicken and Dumplings

A one pot meal: Chicken pieces with a blend of herbs, vegetables, and tender dumplings, an excellent meal to come home to on a cold winters day 

Braised Chicken with wild mushrooms and leeks

Chicken thighs, braised in a wine sauce of leeks, flavorful wild mushrooms and thyme. 

Lemon-Dill Chicken Burgers

These are terrific as an alternative to the traditional hamburger, either on their own or on a sourdough bun.

Basil Crusted Rack of Lamb

If you like garlic you'll love the taste of this dish, with basil and grated cheese 

Lamb Shanks with Fresh Herbs

Fresh herbs, lots of vegetables, great for leftovers. 

Meatballs in Mexican Tomato Sauce

A Blend of ground beef, mint and garlic with a sauce of chiles and tomatoes. 

Baked Ham with Chutney 

German Short Ribs with Sauerkraut

International Entrees

Bombay Style Chicken

Stewed chicken with ginger, garlic, garam masala. Lovely over rice and some greens. 

Spicy Baked Chicken

A marinating period of 3 hours, this chicken has a very red look to it, made with ground red chilies, but can be used with paprika and small amount of cayenne pepper to lessen the heat. 

Lamb Cooked with Potatoes

I like to serve this with okra  and some bread and spiced yoghurt. 

Kashmiri red lamb stew

Can be made with beef. Prepared in a slow cooker, goes well with spinach and potatoes. 

Chicken and Rice

This version uses cinnamon and pine nuts for a Moroccan flavor. 

Ground meat with onion and bulghur

A healthy meal of grains, and spices of cinnamon and allspice. I like to add raisins to this dish.
